BLT with Country Cheese

In the summer, once the tomatoes begin to ripen, we eat bacon, lettuce and tomato sandwiches on freshly made bread every Friday, for as long as the tomatoes last.

Now, you think one would get tired of them wouldn’t you. But we don’t.  Every Friday they are a little different. Yesterday I cooked the bacon folded in little parcels so it was thick and tasty. The bread was rosemary and pumpkin seed. The mayonnaise was made with fresh onion and fresh yoghurt.  And I added a very thin slice of home made fresh cheese.  I know that cheese is not strictly in a BLT but it was so good. And  getting better every time I make it.  I have decided to rename the Farmers Cheese – Country Cheese.  Because I can.

Good morning. In the night we had storm after storm sweep through and some of them brought rain.  Lovely, lovely rain.  With lots of loud thunder, which terrified the dogs, and howling winds. But thats OK,  because our fields got a drink. And the rain barrels and the cows water barrels are all full.

I find it really hard to sleep when it is raining. It is almost as though I need to stand watch or something.  As though the rain might get in a huff and storm off if I don’t give it some attention and listen to what it is saying.  So I just lie there facing the window and pause in the night.

  1. How funny – this is what we had last night…it was too hot eat “properly”. I wish I´d had a slice of your lovely “Country Cheese” – that would have made it perfect 🙂 I usually mix my mayo with yogurt too, I think it gives it a great flavour and a little less naughty that was too.

    After a (hot) day in the garden, and many arguments about keeping doors closed, there was ZERO energy left for making dinner for the Little One and myself…and the bread in the drawer was moldy from the heat. 😦

  3. Tomatoes already? Wow! Mine are still tiny but I can guarantee a few have BLT in their future. Growing up, Sunday alternated between being BLT Day and Hamburger Day. Mom made the BLTs and Dad grilled the burgers.
    We had storms move through early yesterday afternoon and again last night, although from the weather map, it looked like you got more rain overnight than we did. That’s OK. You needed it more. I’m heading out for the farmer’s market soon but, on my way, I’m going to give my tomato plants a talking to. The slackers!

  4. I miss storms. We don’t really get great thunder here, maybe because it’s an island. But like you, where we used to live, I just had to stop and watch. All that power. So glad you’ve finally got your much needed rain too – obviously you need it after reading your research yesterday!

  7. Our storms were angry last night. The trees looked like they wanted to elope with the wind. But in the morning, their lover had jilted them, so they stand, shaken and alone. I grew up on the coast, so these storms are soothing ti me at night. The temp dropped 20 degrees and I slept quite well.

    When will you snail mail the bread?

    • By the sounds of it, If i had thrown a package of bread into the wind last night you would have found it in the limbs of a tree outside your window by morning. A consolation to the wounded tree. c
