BLT with Country Cheese

In the summer, once the tomatoes begin to ripen, we eat bacon, lettuce and tomato sandwiches on freshly made bread every Friday, for as long as the tomatoes last.

Now, you think one would get tired of them wouldn’t you. But we don’t.  Every Friday they are a little different. Yesterday I cooked the bacon folded in little parcels so it was thick and tasty. The bread was rosemary and pumpkin seed. The mayonnaise was made with fresh onion and fresh yoghurt.  And I added a very thin slice of home made fresh cheese.  I know that cheese is not strictly in a BLT but it was so good. And  getting better every time I make it.  I have decided to rename the Farmers Cheese – Country Cheese.  Because I can.

Good morning. In the night we had storm after storm sweep through and some of them brought rain.  Lovely, lovely rain.  With lots of loud thunder, which terrified the dogs, and howling winds. But thats OK,  because our fields got a drink. And the rain barrels and the cows water barrels are all full.

I find it really hard to sleep when it is raining. It is almost as though I need to stand watch or something.  As though the rain might get in a huff and storm off if I don’t give it some attention and listen to what it is saying.  So I just lie there facing the window and pause in the night.

It’s been raining here since April, and if I allowed myself to stay awake at night to keep the clouds a bit of company and have a natter, I’d be institutionalised by now for sleep deprivation. By the way, “Sleepy Morning Start” – the poem I wrote for you and the farmy is being published in August by Sprouts Magazine.

  3. You know it’s strange you mention you have trouble sleeping when it rains. I feel the same way. Not sure why, given we’ve had a month of it now. But look outside – cool, clear, sunny air with scattered clouds blowing on a gentle breeze. Maybe it’s time to emerge from the deluge! But anyway, happy your fields are watered and that the barrels are full!

  4. I’m so sorry I wasn’t around for a full taste yesterday, but I’m glad I stopped by to at least get a crumb! Delicious! I can’t imagine getting tired of this no matter how often I stopped by! The bread sounded like a wonderful combination, too! I must try! Debra

  5. Morning Cinders…sometimes I save your posts to go back and comment or ask a question later and so here I am…Much later! That is the most gorgeous BLT I have ever seen….can you give me your recipe for your mayo…it must be soooo much better than storebought…just like everything is, right?

  6. We eat BLTs in tomato season, too, Celi (the only time to eat them, in that window of time that gives you both tomatoes and lettuce). And it might be tomato season by now!
