So I woke up and I really wanted banana cream pie. We have all made banana cream pie or a variation of it but have you ever caramelized the bananas first? Me neither, so I thought I would try it. I must have been thinking about it in my sleep.
Usually when I have a few bananas on the cusp of TOO RIPE I make either :
Banana Smoothie
Ingredients:
- 2 ripe bananas ( I chop and freeze mine for smoothies)
- 1 cup Greek yogurt
- 1/2 cup milk
- 1 tablespoon honey
- walnuts or kale or both
- Handful of ice cubes
BLEND
OR
Banana and Muesli Breakfast
- 2 ripe bananas, sliced
- 1 cup Greek yogurt (or dairy-free alternative)
- 1/2 cup home made Mama Muesli
- 1/2 cup of milk
LAYER
Today I wanted:
Banana Cream Pie
Here is a funny little reel I made for instagram:
The minute you think about making any kind of pie; cube the butter and pop it in the freezer for the pastry.

Pastry:
- 128g (1 stick) frozen cubes of butter
- 1 cup flour
- Pinch of salt
- 2 tablespoons iced water
Pulse together in a blender.
Wrap the pastry and settle it in the fridge while you make the filling.

Caramelise bananas
Throw chopped banana into a hot pan with a little butter, a tablespoon of brown sugar and a pinch of salt. Cook until soft and a little caramelised. COOL. (see vid) (this vid makes me laugh)
Banana cream pie filling
- One cup ricotta cheese
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons cream
- 2 ripe bananas caramelised (see above)
Pour the filling into the prepared pie tin, sprinkle with nutmeg and bake for 35 minutes at 380F (180 C) – if you have the means, sprinkle the top with sugar and TORCH IT – I don’t have a blow torch – mores the pity!
There now!
Have a lovely day! I have more pastry in the fridge – what should I make next?

I’ve never made a banana cream pie! But I did do a chocolate cream pie with a layer of cherry jam once that was pretty special. Wonder where I’ve put the recipe? Yours looks delicious and no worse off for the lack of blowtorch.
That looks delicious! I can remember going to eat baked spiced bananas in Penzance when I was a teenager.
I made a smoothie once. Once. I made the mistake of using greenish bananas because they taste better to me whole than ripe ones. BIG MISTAKE. There is a time and place for every type of banana, and green ones do NOT belong in smoothies. It was so bitter that my mouth felt like sandpaper for hours!
Ha ha!!! So funny!!
this sounds so good
So many bananas! Love them in a smoothie!
Next? How about coconut cream or coco chess pie?
Sounds delicious!
Looks so good! Must try it sometime.
Yes! Use cream cheese or crème fraiche. Much nicer than the ricotta.
I shall have to work out what to use instead of ricotta (can’t do lactose). I can get condensed coconut milk… maybe that, plus an extra egg, but it would be pretty sweet. Maybe some lime juice to brighten it. What do you think?
I think pan fry the banana sliced longways in coconut oil until soft then Caramelize with a little honey. Eat with your favorite dairy free ice cream!
Skip the pie altogether.😂
I don’t think I’ve ever had banana cream pie.
I’ve never made banana pie before.. was it a winner
