Banana Cream Pie.

  • 2 ripe bananas ( I chop and freeze mine for smoothies)
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 1 tablespoon honey
  • walnuts or kale or both
  • Handful of ice cubes
  • 2 ripe bananas, sliced
  • 1 cup Greek yogurt (or dairy-free alternative)
  • 1/2 cup home made Mama Muesli
  • 1/2 cup of milk
pastry in pan

Pastry:

  • 128g (1 stick) frozen cubes of butter
  • 1 cup flour
  • Pinch of salt
  • 2 tablespoons iced water
caramelised banana
  • One cup ricotta cheese
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons cream
  • 2 ripe bananas caramelised (see above)

  1. I’ve never made a banana cream pie! But I did do a chocolate cream pie with a layer of cherry jam once that was pretty special. Wonder where I’ve put the recipe? Yours looks delicious and no worse off for the lack of blowtorch.

  2. I made a smoothie once. Once. I made the mistake of using greenish bananas because they taste better to me whole than ripe ones. BIG MISTAKE. There is a time and place for every type of banana, and green ones do NOT belong in smoothies. It was so bitter that my mouth felt like sandpaper for hours!

  3. I shall have to work out what to use instead of ricotta (can’t do lactose). I can get condensed coconut milk… maybe that, plus an extra egg, but it would be pretty sweet. Maybe some lime juice to brighten it. What do you think?
