You will remember that a few months ago, John bought in some sauvignon blanc grape juice for making into wine. We bottled the wine this morning. This is just a light table wine. Nothing special but Quaffable, darlings!! The good wine is still in the tank.
I have a very simple cream of broccoli soup for you. You can use this recipe for all kinds of vegetables so feel free to experiment. My mother would make this with chopped celery using the same process, but with lots of pepper and no blending.
Cream of Broccoli Soup with Ricotta.
- 4 tablespoons of butter
- 1 finely chopped onion
- 3 tablespoons of flour
In a saucepan, cook onion in butter, make a roux with the flour
then add:
- three cups chicken or vegetable stock
- 1 cup white wine
- 2 big bunches of broccoli
When the vegetables are cooked. Puree in a blender and return to saucepan.
Mix
- 1 cup ricotta cheese
- 1/2 cup full cream
Pour in with the creamed broccoli. Pepper and salt to taste. Reheat. This has a very fresh light taste and makes a perfect easy lunch. Naturally it has a heaped serving of freshly grated parmesan cheese sprinkled on top. I served this with onion and cheese scones.

If the weather is still nice tomorrow, we will prune the pears and the grapes. If it is rotton I shall go into the barn with Daisy and sulk. Fingers crossed.

Some years we have fantastic brocolli, this year was not one of those years, And this fall something is EATING them, not me, however we got a few bunches.. fresh broccoli is so full of goodness! c
The soup sounds fabulous, but that scone…that scone made me gasp! Oh how I miss some of those things since going gluten free and dairy free!
Gluten and Dairy free would be Very hard for me. I think you are amazing sticking to it as well as you do. Did you see that recipe for flour free chocolate cake floating about? c
This will be on the menu one night next week. Rain comes in tonight and by Tuesday the high will be 34! Just the night for such a treat!

The weather in Vancouver has been cold, rainy and dreary, so this soup is definitely in order!
I worked on a job in vancouver once for 6 weeks and it rained for 42 days straight, thankfully the work was being filmed in the studios there or we would have been literally sunk! Vancouver is a beautiful sleepy city.. c

How clever to use ricotta in the soup! I’ve never seen that before! I think I have a butternut squash that will love to be blending into soup!
