Stormy Chocolate Chip Cookies

Yesterday the first of the autumnal storms roared across the farm.  These storms are very slim bands of weather. Hitting one farm and not the other. Wreaking havoc here and calm over there. storm in the corn

Hugo laughed crazily and ran out into the storm. Josh had been recording the sounds of the storm in the corn (he is a musician, a composer – needing a quiet spot to work on a Fellowship proposal and loves all things sound) so they banded together and screamed into the teeth of the gale – scaring it away.

Yesterday  I lost a bet. Hugo ( who looks after the chickens – the layers) and I have been betting for days as to how many eggs the chickens will lay and so far I have always been right. But yesterday evening I lost the bet  – there were not 15 eggs there were 22!. I lost with a startlingly wide margin of error.  Hugo, of course, looked smug and said “Well, You see I talk with them – they are my little friends.”   (you have to say that in a French accent).

So today (because I lost the bet) I have to make Chocolate Chip Cookies ” Lots of, lots of, lots of . ”  – apparently.

But I have never made chocolate cookies. I am not a chocolate chip cookie lover, you see. So. Do you have a recipe for me? -that only uses maybe five or six ingredients. Not fancy.  Just tasty. I have a block of good bitter chocolate in the fridge. Now what?

  1. Yay something useful I can contribute. This recipe makes a lot of cookies. It is a Mrs Fields Chocolate Chip Cookie recipe variation since I couldn’t easily google an exact copy. You need a very big mixing bowl and is best mixed using your hands. The kids have used it for fair competitions and have won ribbons, the placing seems to depend on who bakes them.
    1 lb soft butter, 2 c. packed dark brown sugar (light works too), 1.5 c white sugar, 2 tbsp vanilla, 3 large eggs, 6 cups flour, 1.5 tsp salt, 1.5 tsp baking soda, 4 c chocolate chips, 2 c chopped nuts . Mix all together except chips and nuts. Mix well with hands. Add chips and nuts. Drop by spoonfuls onto lightly greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Nuts are optional I usually take part of the batter and mix some pecans in for me and my husband, the kids prefer no nuts. I use less chocolate chips too as I like more cookie and less chips. I have baked them in a pan as a bar cookie. Also I have shaped the dough into a log and both refrigerated and frozen it. The cookies are not as pretty but they still taste good.

  2. I just use the good old Nestle recipe – on the bag of chocolate chips – with an additional 1/2 cup of flour. I’m really wanting to try a variation with potato chips mixed in. Plus, I have found that almost all cookies benefit from a very light dusting of coarse sea salt on top before baking.

    you could chop up your chocolate bar- this is my recipe:
    Here’s my version of Chocolate Chip Cookies
    •2 1/2 cups all-purpose flour
    •1 teaspoon baking soda
    •1 teaspoon salt
    •1/2 cup melted butter
    •3/4 cup granulated sugar
    •3/4 cup packed brown sugar
    •4 teaspoons vanilla extract
    •2 large eggs
    •1 Bitter-sweet Chocolate chips-I use Ghirardelli http://www.ghirardelli.com/
    •1 cup Walnuts chopped so fine as most is a powder. I use a my hand held immersion blender attachment to quickly chop up the walnuts

    Directions: pre heat oven to 375F/190.56C

    Combine flour,baking soda and salt in small bowl. Beat melted butter, sugars and vanilla in a large bowl until creamy. ( I just use a fork ). Add eggs one at a time, beating well after each addition ( I’m still using a fork ). Gradually beat in flour mixture. Stir in chocolate chips and chopped walnuts. Drop by rounded tablespoon onto ungreased baking sheets. ( I use parchment paper ).

    Bake for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes and transfer to wire racks to cool completely. Yields approximately 5 dozen cookies.

    These cookies can be enjoyed with a nice glass of milk or even a glass of red wine.

  4. The pictures are totally awesome! The guys are so free spirited. I love love love weather like that! So fun to be outdoors-a little dangerous perhaps but it makes me happy.
    I bet the chickens do love Hugo, my chickens always loved to be talked to. I had a chicken that would talk like crazy when she would get a bug and spit it out to show me-so cute.

    I haven’t added my two-pennorth of cookie recipies – having read this lot, you don’t need mine as well! You don’t have to have choc chips – you can do them with cocoa, if they are for VERY HUNGRYY BOYS. Good eating.

  7. Sorry, can’t find my trusty old choc. chip cookie recipe … and it was the best too. (a lot of good that does you, hmm? lol)
    I think, C, that you bring out the best in people, although I do believe that most females will swoon over a loving French accent so you didn’t have a chance of winning to begin with.

  8. 2 1/4 cups flour, 1 tsp salt, 1/2C butter, vanilla to taste, 1/4 tsp nutmeg, 1/2 tsp baking powder, 2 eggs. Blend soft butter and eggs, combine dry ingredients. Mix all ingredients. Drop onto cookie sheet and bake for 9 minutes at 375 degrees. Or add an extra egg and throw the whole lot in a deep dish pizza pan and bake at 350 for 28-30 minutes.

        For the choclate: while reading I imagined melting your block in a bain marie, dunk cookies in and let dry. Mmmmmh. But that’s a lot of work. Or drizzle the melted chocolate all over your cookies. If you like…
