Bread and Pasta

This is why my clothes are getting tight!

 Zacks Friends Bread Recipe

  • 1000 grams flour,
  • 720 grams water (at 90F )
  • 21 grams salt,
  • 4 grams yeast.

Autolyse the dough. (Add the water and the flour and let sit for half an hour.)

Sprinkle on salt and yeast and fold or pinch together.

In a large bowl fold dough twice in the first 80 minutes.  Then  let the dough ferment covered for 5 hours. Gently turn out onto board. Divide, shape into two loaves set each loaf into its own bowl and allow to rise again for an hour and a half.

Heat two cast iron dutch ovens with lids for 45 minutes at 450F (500F in my oven). Transfer loaves to Dutch ovens and cook with lid on for 30 minutes then the lid off  for 2o minutes.

bread

Isn’t that a gorgeous loaf of bread.

Zacks other friends Pasta recipe (we ate this pasta last night with a butternut sauce and a salad of freshly picked tomatoes and green herbs.)

  •  300 grams egg yolks (that is 18 egg yolks)
  • 360g flour
  • 2 pinches of salt
  • 1 1/2 teaspoons olive oil

On your board. Make a well in the flour, pour in egg yolks  and oil mix gently together with hands.

pasta dough

Note: This is a very dry dough so spritz with water until it comes together – this way you won’t add too much water.  Stop when you have formed a smooth firm dough. Wrap and refrigerate.

pasta making

Then make the pasta of your choice. Last night Zack made tagliatelle.

If you have any questions please ask in the comments and I will ask Zack for you.

cat

This is Marmalade protesting that someone has put pig food on her favourite chair and she cannot fit. Whine, whine, whine.

cows

The milking cows have been taken to milking every 18 hours on their way down to once a day milking. Lady Astor is finally dropping her production which I am grateful for. Both will probably milk all the way to Christmas at least and early morning milking in the winter is not a happy experience for anyone especially as we have to drag the pump in and out.  Once a day is quite doable.

milking room

I could have milked Aunty Del once a day right from the beginning, her production is so small, but the cows follow each other so it is either both or none. We were just waiting for Lady to catch up or down as the case may be.  I milked Lady once a day all last summer.

guineas

The guineas love the new truck, they love shiny things. And Boo always loves a vehicle with shade.

I hope you have a lovely day.

  1. Everything sounds fine and dandy… I hope that means your troubles have lessened. You are still in my thoughts

  2. That pasta looks wonderful, but I don’t think I’d be able to make gluten free flour work, it will never form an elastic dough because of no gluten. Ah well… And I like the sneak preview of the truck, which I hope is a precursor of a series of lovely brag photos…

  3. Miss C you are such a tease! Marmalade really wanted to sit on that chair, love the egg yolks and you haven’t fed them chillies yet either. Planted strawberries here today. I am going to try veges in pots on the veranda here this year. Trouble each pot had to be filled three times because two ginger kitties were using them as a toilet as soon as I had them filled ready to plant, grrr. How long does the pasta dough rest in the fridge? Laura

  4. Ohhhhhhhhhhhhhhh, I see a meringue of some sort in the works today! I am positively green with envy right now…. fresh bread and fresh pasta with a refrigerator full of egg whites to follow up with. Perhaps a pavlova with fresh cream whipped to top it off with? O. M. G. !!! (I have been on a diet for about a month here — does it show? haha)
You’re teasing us with photos of the tires only from The Boat. I guess that is the angle that Ton sees, but a full view is requested… Heavens! 22 feet! Phew, that is one big boat… a cruise liner! heh heh Have a great day! ~ Mame 🙂

  5. That pasta must have tasted amazing with all those delicious yolks! Waiting now for the meringue recipes 😀 the light in your photos today is very different…all warm and autumnal.
