Bread and Pasta

This is why my clothes are getting tight!

 Zacks Friends Bread Recipe

  • 1000 grams flour,
  • 720 grams water (at 90F )
  • 21 grams salt,
  • 4 grams yeast.

Autolyse the dough. (Add the water and the flour and let sit for half an hour.)

Sprinkle on salt and yeast and fold or pinch together.

In a large bowl fold dough twice in the first 80 minutes.  Then  let the dough ferment covered for 5 hours. Gently turn out onto board. Divide, shape into two loaves set each loaf into its own bowl and allow to rise again for an hour and a half.

Heat two cast iron dutch ovens with lids for 45 minutes at 450F (500F in my oven). Transfer loaves to Dutch ovens and cook with lid on for 30 minutes then the lid off  for 2o minutes.

Zacks other friends Pasta recipe (we ate this pasta last night with a butternut sauce and a salad of freshly picked tomatoes and green herbs.)

  •  300 grams egg yolks (that is 18 egg yolks)
  • 360g flour
  • 2 pinches of salt
  • 1 1/2 teaspoons olive oil

On your board. Make a well in the flour, pour in egg yolks  and oil mix gently together with hands.

Note: This is a very dry dough so spritz with water until it comes together – this way you won’t add too much water.  Stop when you have formed a smooth firm dough. Wrap and refrigerate.

Then make the pasta of your choice. Last night Zack made tagliatelle.

This is Marmalade protesting that someone has put pig food on her favourite chair and she cannot fit. Whine, whine, whine.

The milking cows have been taken to milking every 18 hours on their way down to once a day milking. Lady Astor is finally dropping her production which I am grateful for. Both will probably milk all the way to Christmas at least and early morning milking in the winter is not a happy experience for anyone especially as we have to drag the pump in and out.  Once a day is quite doable.

I could have milked Aunty Del once a day right from the beginning, her production is so small, but the cows follow each other so it is either both or none. We were just waiting for Lady to catch up or down as the case may be.  I milked Lady once a day all last summer.

The guineas love the new truck, they love shiny things. And Boo always loves a vehicle with shade.

  2. Milady, enough of the tease! May we please see the whole ‘Boat’ not just the exhaust pipe and bits of the front!! Thank you !!! Yep. ‘autolyse’ is a new word for me also and I do not normally bake – but this is interesting and the recipe is already in the kitchen for the next time I am AGAIN running out of the store variety 🙂 ! [Oh Lordie, 16 eggs last me a month 🙂 !!]

  3. Thank you thank you for the bread recipe! There is a baby shower in the offing for my step son and his wife. We will be having red chili, white chili and soup along with cheeses, fruit and bread and I’m in charge of the bread. This sounds like it’d be a perfect pairing with the soup and chili! Who can resist soup and crusty bread on an October day?

  4. Seeing all of those yolks reminds me of the pasta dough the women of the 2-flat made on Saturday afternoons. That morning Grandpa and I would bring back live chickens from the market. He’d slaughter them, Nonna removed the feathers, and very often I’d clean them, being careful not to break the yolks as I removed the innards. That pasta would be served on Sunday evenings. Nothing compares to the color of pasta made from eggs so fresh. Just look at Zack’s!
    The Lurch shirt arrived today. YAY!
